The name ‘Paramus’ refers to a high flat valley which is between two valleys, and it is higher than the other valleys (paramount plain). In Spanish it is called ‘paramo’, or ‘paramu’ in Catalan.
The winery is called Bodegas La Soterrana. It was established in 2006 in the town of Olmedo, and is the result of the ambitious project of several friends (oenologists, winegrowers etc). Their passion for wine – and the Verdejo variety in particular- led them to follow up a whim to develop a Verdejo white wine within the Rueda DO for the sole purpose of its quality and distinction.
Very old vines (>100yo), hand harvesting and pre selection of grapes, along with the application of the most advanced technology, ensure that their wines show quality and distinction within the DO.
