A wine of complexity and delicacy, aged for a longer time on the lees to develop classic brioche and vanilla aromas.
Best pairings: white crab, lobster, fritto misto, octopus, mussels.
“This smells like an autumn apple festival! Gloriously appley. And such purity! A wine that is not relying on lees ageing to give it depth or flavour or richness – it’s all there in this incredible fruit. It fills the mouth, a trumpet concerto of silver and gold notes, while the acidity feels like the spine-tingling vibrations of harp strings, thrumming up and down – I can feel this wine like a thread-fine electric current under my skin and through my bones. Translucent white spring florals dancing weightlessly through prismic citrus; lime, yuzu, grapefruit peel. Then, right at the end, a lick of cold salted butter, a dab of cumin and coriander spice. Outstanding!”

2014 Tillington Single Vineyard

A true expression of place, this rare and refined wine encapsulates the exceptional terrior of one of Nyetimber’s most celebrated vineyards.
A light gold complexion with very fine bubbles. On the nose, alluring aromas of wild strawberry and a delicate floral bouquet lead into richer notes of pastry and praline. The palate is generous yet refined, with ripe red apple and apricot complemented by undertones of fresh citrus. Opulent fruit and complex almond characters persist in a long and nuanced finish.
Structured with a richness that pairs beautifully with weightier fish, such as monkfish or John Dory.

2010 Prestige Blanc ‘1086’

1086 wines are characterised by their balance; acidity, length and texture are all beautifully represented and combine seamlessly upon the palate. The 2010 has an elegant pale golden colour and complex aromas including fresh grapefruit, nougat and a fine minerality. The palate is both delicate and yet generous with great intensity and a lovely touch of vanilla on the delightfully long finish.
