DEWAZAKURA (出羽桜)
The owner should craft the sake with their own hands
Established in 1892, Dewazakura Sake Brewery is located in Tendo City in Yamagata Prefecture, a small town of 60,000 residents located 300 kilometres north of Tokyo.
Dewazakura have played a significant role in the Yamagata prefecture developing their own rice suited to their region with the local agricultural bureau, and this is known as ‘Dewa Sansan’, which they use for a selection of their Sake. They have also developed a special yeast to suit the climate.
Dewazakura are known for their distinctive ‘fragrant’ Sake, attributed to their yeast selection and low temperature fermentation techniques.
HOURAISEN (蓬莱泉)
Crafted in Harmony, Perfected in Flavour
Houraisen was established in 1864 in the Prefecture of Aichi, about halfway between Tokyo and Osaka. It is located 700m above sea level with a cool climate.
Houraisen owns about 29 hectares of their rice paddocks and grows rice suited to the region. It uses pure soft water for Sake making.
Over the past 20 years Houraisen in collaboration with the local agricultural bureau has developed a strain of rice most suited to their mountainous terrain – Yumesansui.
KENBISHI (剣菱)
Be a clock that stopped
Established in 1505, Kenbishi is the oldest existing brewery in the Nada Region, and the 4th oldest brewery in Japan. The logo on their label today was trademarked in 1505 and was the first trademark in Sake history. Historically, Nada is the largest Sake production area in Japan.
All Kenbishi Sake is blended, aged Sake. Their house style is dry with an aged character, with high acidity and umami.
In Japanese history, many famous people, including Samurai and Geiko, have enjoyed Kenbishi. No other Sake brewery makes Sake like Kenbishi.
It is one of a kind.
KUNI ZAKARI (國盛)
Pride in our heritage, Shaping a new era
Kuni Zakari was established in 1844 in Handa City, Aichi.
Handa City is situated on the Chita peninsula, about 380km southwest of Tokyo.
Kuni Zakari recognizes that tastes evolve over time, and as a result, the brewery has adapted to meet changing preferences. Since the late 1980s, they have expanded their product range to include a variety of sake styles—from casual, everyday options to award-winning premium sake. They’ve also embraced sweeter liqueurs such as Umeshu and Yuzushu. Recently, they introduced Fruilia, a collection of fruit liqueurs made with Japanese white peach (Momo), mandarin (Mikan), pear (Nashi), and mango, which have quickly gained popularity both locally and internationally.
SHICHIDAI (七田)
Traditional yet adaptable. The 150 years of sake brewing.
Established in 1875, Shichida Sake is created by Tenzan Shuzo in Saga on the southern island of Kyushu.
Unlike the colder northern regions of Japan, Saga enjoys milder winters, which influences the sake-making process. Shichida takes advantage of the region’s relatively warmer temperatures, incorporating them into their unique brewing techniques. They also use locally grown rice sourced from contracted farmers.
Shichida’s signature style is known for its juicy, full-bodied flavour and well-balanced structure. They’re excited to present their new Junmai, which features a leaner, more refined profile.
YOSHINOGAWA (吉乃川)
Changing to stay the same: The ever-evolving Kura
Founded in 1548, Yoshinogawa is located in Nagaoka City, Niigata Prefecture, and is currently run by the 20th generation of the Kawakami family. It holds the distinction of being the oldest sake producer in Niigata and the fifth oldest sake brewery in Japan.
As one of the largest sake producers in Niigata, a renowned region for premium rice production, Yoshinogawa is celebrated for its crisp, clean sake with a signature dry finish.
