Pepper Tree Limited Release
Pinot Noir Rosé 2021
This block was harvested and pressed off skins after four days in the winery to integrate flavour and aromatics. The resulting juice was cold settled clear before being inoculated with an aromatic yeast strain to enhance aromatic profile of strawberries and cream, guava and wild raspberry notes. Following ferment the wine spent two months on fine yeast lees to promote flavour integration and build mid palate texture before being stabilised and prepared for bottling.
“A bright and pretty wine full of floral notes and expressive fruit. The palate is wild strawberry with a dash of cream finishing dry and crisp with a white peach acidity. Served chilled it pairs well with fish and chips or your favourite takeaway.”
