Terra Olympus is a project of Apostolos Thymiopoulos in the zone of RAPSANI, located on the south foothills of Mount Olympus. The unique relief of the area with its spectacular vineyards, produces wines that balance ideally between finesse and concentration. The intervention in the vineyard as well as in the winery is minimal, enhancing properly the production of a wine with genuine expression of the “terroir” that it comes from.
A mediterranean climate, with the altitude in addition to the constant presence of air playing a crucial role in the retainment of freshness into the grapes.
All certified organic, with some biodynamic practices being applied. The altitude is between 400 to 600 metres. Half of the vineyards are 70 years old ungrafted vines, while the other half range from 15 to 35 years old.

50% Xinomavro 35% Krassato 15% Stavroto
Elegant aromatic character of fresh black fruits with hints of floral and herbal notes. On the palate is complex and balanced between the mouthfeel and the refreshing level of acidity. The tannic structure is robust, yet silky and round. The aftertaste is long and complex.
Food pairing : Roasted lamb, grilled white and red meat, pasta ragù.
“Very gentle and welcoming with an appealing mix of sweetness, tannin and acid and real personality. Balsamic notes with some evolution. I’d defy any wine lover not to be intrigued by the beautifully integrated, persistent, throat-warming wine. Not at all heavy but nuanced and it introduced new facets of itself throughout the tasting experience.”
